  • 2 Carrots
  • 2 Potatoes
  • 1 Onion
  • 1 tablespoon Butter (or olive oil)
  • 1½ l Vegetable Broth (or beef broth)
  • 2 dl Half and Half
  • 1 tablespoon Curry Powder
  • 1 tablespoon Paprika
  • 1 teaspoon Salt
  • Pepper
  • 1 Lemon Grass

  • Start by preparing the pumpkin. Cut it in half, remove the seeds with a spoon, and peel it if needed, depending on the type of pumpkin you're using. Then, cut the pumpkin into cubes and set it aside.

  • Next, prepare the carrots and potatoes by cutting them into cubes. Dice the onion into small pieces.

  • In a large pot, add the butter or olive oil, and heat it over medium heat. Once the butter has melted (or the oil is hot), add the diced onions and vegetables. Sauté them until the onions become soft and fragrant.

  • Now, add the cubed pumpkin and the vegetable (or beef) broth to the pot. Make sure the broth covers all the vegetables; if not, add more as needed. Cover the pot with a lid and let it simmer for approximately 30 minutes, or until the pumpkin is very soft. You can check its tenderness by doing the fork test.

  • While the soup is simmering, prepare the lemon grass. Cut the lemon grass stalk into several pieces and bruise them slightly to release their aromatic flavors.
