This is my favorite Egg Salad on Toast Recipe ever! It is super easy to make and uses only a few ingredients that you normally have at home already. This dish is perfect as a snack, lunch, dinner or a starter when you have guests over.

Just like with chocolate chip cookies I often get huge cravings for egg salad! Specifically my family’s egg salad on buttery toast! Since years my mom makes this recipe and I am addicted to it! We actually always keep hard boiled eggs in our fridge just in case someone will get cravings again. So obviously I have to share my addiction for this salad with you all! You could also just eat the egg salad but trust me it is less messy and also tastes amazing on some toast!

Ingredients for this egg salad toast recipe:

  • Eggs: You will need hard boiled eggs to make this recipe. Buy them at the store or cook them yourself.

  • Salt & Pepper: Use salt and pepper to season the egg salad to your taste.

  • Diced onions: This is an optional step. It gives the egg salad some crunch and extra flavor.

  • Butter: You need the butter to spread on the toast before you top it with the egg salad.

  • Toast: The egg salad is getting served on a piece of toast. This is the way we always do it. However, you can use any kind of bread you like.

How to make this egg salad toast recipe:

This recipe is super simple and quick to make. Perfect for a last minute dish for dinner or when that egg salad craving is hitting you!

Make the egg salad:

First we assemble the egg salad.

Add the diced eggs to a big bowl.

To the same bowl add the mayonnaise, salt and pepper and mix gently with a spoon. If you want to use onions you would add them in this step.

Make sure you taste the egg salad and use more seasoning if needed.

You can easily prepare the egg salad early and keep it in the fridge till shortly before you need to serve it.

Assemble the toast:

Spread your favorite butter on top of the toast. You can also use vegan butter it really does not matter.

Spoon the egg salad on top of the toast and fill all the way to the edge. Make sure you really cover that toast! Personally I say the more egg salad the better! We want all that goodness!

Immediately serve the prepared toast. You can keep them in the fridge for a short time till you serve them. However, the longer you let them sit in the fridge the more soaked the toast gets.

Extra notes:

  • Add some chopped chives as decoration. We sometimes do that when having guests over.
  • If you prefer to have some crunch in this dish then toast the toast.
  • Cut the toast diagonally in half to have smaller snacks.

Can you make this ahead / storing:

You can easily make the egg salad ahead of time and keep in the fridge. Make sure you keep it in a closed container. Then assemble shortly before you will serve it / the guests arrive. You can assemble the toast beforehand and keep it ready in the fridge if you want. However, the longer you let it sit the more the toast will get soaked and turn lumpy.
