For me galettes are the lazy way of making a pie. Which comes in super handy as sometimes you just don’t have the nerve to make a pretty looking pie. This rustic version is super easy to make and will still look good.

Ingredients:

  • Pie Dough
  • Blueberries and blackberries
  • Sugar
  • Corn starch
  • Lemon juice
  • Corn starch
  • Rosemary
  • Milk
  • Cane sugar

For the pie dough I highly recommend using a homemade dough. However, you can also use a store-bought one.

For the filling we fresh blueberries and blackberries. For the sweetness we add some sugar. Then add some lemon juice and cornstarch to combine everything well and make a nice and juicy filling. The corn flour will make sure the filling doesn’t make the dough to soggy by soaking up the liquidsWe level up this galette with some chopped up rosemary. The combination of fruits and herby in a sweet dessert is just amazing, you will ove it!

This galette is full of little simple details that elevate it from a boring galette to a flavor explosion. Instead of just brushing the edges with milk, we also sprinkle some cane sugar on top of the milk. After baking we add fresh rosemary to round up the whole dish.

How to make rustic blackberry and blueberry galette:

Many people are intimidated by making a pie. However, don’t you worry. This recipe is super easy to make and the perfect start to get into pie making.

Prepare the filling:

First we make the filling. Simply add the blueberries, blackberries, sugar, lemon juice, corn starch and chopped up rosemary all to a medium bowl. Gently mix all the ingredients with each other and set it aside.

You can easily make the filling ahead and keep it in the fridge until you use it.

Prepare the galette

Cut your dough in half and roll each half out into a circle. Spoon the berry filling into the middle of the dough. Make sure you leave a boarder of 4-5cm (1.5-2 inches).

Next, fold the edges of the dough over the filling. Carefully fold the first part over the filling. Make sure you only fold in the part without filling on it and don’t push the filling further in. Then fold over the next part of the edge overlapping the first one. Keep on doing this until the whole circle is folded in. You can gently push the dough together to make sure they really stay in place. Or you can use some milk or water on the spots the dough overlaps to make sure they stock.

Once all the edges are folded in brush them with some milk and sprinkle them with cane sugar.

Let the galette rest in the fridge for about 30 minutes. This step will help the galette to keeps its shape.

Bake the galette

Preheat the oven to 180°C / 360°F. Then bake the galettes for 30-35 minutes. Once the galettes are baked sprinkle them with some fresh rosemary. Let the galettes cool for a bit so you won’t burn your mouth and then serve warm. I know it is hard to resist biting into it right away ^^

As a last step you can add some extra toppings if you want.

  • Vanilla ice cream: Perfect for those hot summer days
  • Powdered Sugar: Just give it a light dusting
  • Butter: Add some butter before you bake the galette to intensify the flavor even more.

Ingredients
 
 

  • 1 pie dough choose your favorite recipe or store bought one
  • 250 g Blueberries
  • 250 g Blackberries
  • 1-2 tbsp. sugar
  • ½ lemon juice
  • 1 tbsp. corn starch
  • 1 tsp. rosemary chopped, (plus more for garnish)
  • 1 tbsp. milk
  • 1 tsp. cane sugar

Instructions

  • Gently mix all the ingredients with each other.
  • Cut your dough in half and roll each half out into a circle.

  • Fold the edges of the dough over the filling. It's okay if the dough overlaps, that is how it is supposed to be.
  • Brush the edges with some milk and sprinkle them with cane sugar.
  • Let the galette rest in the fridge for about 30 minutes.

Bake the galette

  • Preheat the oven to 180°C / 360°F.
  • Bake the galette for 30-35 minutes.
  • Sprinkle some fresh rosemary over the warm galettes and let them cool for a bit. Then serve them. You can add some extra toppings if you wish so.

Notes

  • Rosemary: Make sure your rosemary is fresh and clean.
