How to make roasted tomato salsa from scratch
Roast the tomatoes:
Preheat your oven to 180 °C / 355 °F.
Cut 2 slits into the top of your tomatoes about halfway trough.
Arrange the tomatoes on a baking sheet and drizzle with olive oil
Bake for 20 minutes or till the blisters. Remove them from the oven and let cool a bit.
Make the salsa
Now you have 2 options:
- By hand (more chunks): Dice your tomatoes and the onion, add them to a bowl with the grated garlic. Then cut up your cilantro, add it to the bowl and mix it all.
- Food processor / mixer (more smooth): Cut your onion and tomatoes into quarters and add them to a food processor together with the garlic cloves and cilantro. Pulse a few times till you get the consistency you like.

Q: Can I use canned tomatoes for salsa?
A: Yes, you can replace the fresh tomatoes with canned tomatoes. We have done that plenty of times with no problem. Make sure to get whole canned tomatoes for roasting. If you can not find whole tomatoes simply use leave out that part and use them for the salsa as they are.
Q: Can I roast my tomatoes on the grill?
A: You can absolutely do that. Roasting your tomatoes on the grill actually gives them a nice charred taste that is perfect for this salsa.

- 4 Whole Tomatoes alternatively use a can of whole tomatoes
- Olive Oil extra virgin
- 1 Red Onion
- 2 Garlic Cloves grated
- 1 handful Fresh Cilantro use as much as you'd like
Instructions
Roast the tomatoes
- Preheat your oven to 180 °C / 355 °F.
- Cut 2 slits into the top of your tomatoes making a little cross. Make sure to cut halfway trough the tomato.
- Arrange the tomatoes on a baking sheet and drizzle with olive oil.
- Bake for about 20 minutes or till the tomatoes start to get blisters. If you have a broiler option in your oven make sure to turn that on in the last 10 minutes.
- Remove them from the oven and let cool a bit.
Make the salsa
- Now you have 2 options. You either dice your tomatoes and the onion by hand (more chunks) and add them to a bowl with the grated garlic. Then cut up your cilantro, add it to the bowl and mix it all. Or cut your onion and tomatoes into quarters and add them to a food processor (smoother) together with the garlic cloves and cilantro. Pulse a few times till you get the consistency you like.
