Pumpkin Simple Syrup

This pumpkin simple syrup is the perfect addition to your fall cocktail game! When making pumpkin puree very juicy pumpkins can have a lot of excess liquid you usually would dump out. This recipe uses those liquids to make an amazing simple syrup.

Nothing says fall like pumpkin everything! When roasting pumpkins for homemade pumpkin puree you sometimes end up with a very wet mixture with unwanted additional pumpkin liquids. Especially when using butternut squash this happens a lot. My family and I always try to keep our food waste to a minimum and use up everything we can. Just pouring the liquid into the sink bothered me as it was packed with pumpkin flavor. There had to be a way to use it. So, I asked the community for some ideas. There are many ideas to use the liquids that I absolutely loved and also mentioned in my pumpkin puree post. However, the lovely Katy from Mitten Girl had the perfect idea! This idea obviously could only come from the cocktail queen herself! She suggested to create a simple syrup for cocktails with it. Genius right?!

Immediately I started testing the recipe and omg it turned out amazing! This syrup will be the perfect addition for your fall cocktail! As it is pure pumpkin juice that we use here the flavor is rather earthy and there is only some sweetness coming from the sugar to create the syrup.

Ingredients for this simple syrup:

  • Liquid from a pumpkin: You will get the liquid from the pumpkin puree makin process when using pumpkins with a lot of liquids like butternut squash.
  • Sugar: You can use both white or brown sugar. However, I highly recommend using the brown one as it goes very well with the pumpkin flavor and gives it a little kick with the nuttiness.

How to make this pumpkin simple syrup:

Making this syrup could not be any easier. You make it the same way as a basic simple syrup.

As we use the pure pumpkin juice we have the full earthy flavor to work with which needs some sweetness. Might not be very tasty to only have the earthy taste in your cocktail, not my kind of cake for sure. Therefore we use the standard ratio of 1:1 liquid to sugar. This will add enough sweetness and make a nice thick syrup.

I learnt to make syrups using cups which is why the first measurement will be in US-metric.

Now here is the how to plan on how to make this delicious/tasty syrup:

Get a small saucepan out and place it on the stove.

Measure the amount of liquids you have from your pumpkin. Then add them to the pan.

Next add the same amount of sugar as you have of the liquid to the same pan.

Bring the mixture to a boil on medium high heat. Let it simmer till it starts to thicken a bit (about 10 minutes),

Turn off the heat and remove the pan from the stove.

Fill the hot syrup into a bottle or jar. I highly recommend sterilizing the bottles/jars first before pouring the hot syrup in to make sure the syrup stays fresh for a long time and does not get moldy. Here is a post explaining you how to do it.

Storage

Keep the syrup in a cold dark place while still closed. We usually keep it in the cold garage. Once you open the bottle it is recommended to keep it in the fridge.

How to use this syrup?

You can use this syrup like any other simple syrup. Here are a few ideas:

  • Add it to your cocktails or mocktails
  • Use it in your coffee
  • Add it to your milk or whipped cream before frothing/whipping
